For over 15 years, Red Claw Lobster Bakes has been delivering the authentic experience of a traditional New England wood-fired lobster bake to families, weddings, and event hosts across Maine. Founded by Tom Caron, a lifelong lover of Maine’s coastal heritage and seafood traditions, our company was built on the idea that a lobster bake is more than just a mealit’s an experience.

What started as a small, family-run catering business has grown into a trusted name for those seeking high-quality, expertly prepared lobster bakes that capture the essence of Maine. Tom’s son, Jordan, is a Registered Maine Guide and avid sports fisherman. He also owns Reel Addiction Sportfishing Charters. He grew up on the Maine coast, spending his days on the water and around the fire, making him a natural fit for the lobster bake tradition. Whether he’s setting up the bake or sharing a fishing tale, Jordan brings passion and local expertise to every event.

Sarah, Tom’s daughter, ensures that everything looks as good as it tastes! A biologist by trade, she has made a home and career in New Hampshire, but Maine keeps calling her back. In the summer months, she helps set up and perfect the presentation at Red Claw Lobster Bakes—when she’s not assisting with her mother’s wedding coordination business, Dragonfly Services.

Craig is a seasoned chef and former restaurant owner in the Boothbay Harbor area. As one of Tom’s longtime friends, he brings both culinary expertise and plenty of witty remarks and time-tested jokes to every event. With years of experience in the kitchen and behind the grill, he’s a fantastic addition to the Red Claw crew.

Dane wears many hats! Now in his sixth season with Red Claw, he splits his time between working at his family’s shop in downtown Boothbay Harbor and running lobster bakes alongside Tom and the team. His adaptability and dedication make him an invaluable part of the crew.

The History of the New England Lobster Bake

The lobster bake is one of New England’s oldest culinary traditions, dating back centuries to the Indigenous tribes of the Northeast. The Wabanaki people, native to the coastal regions of Maine, were the first to cook shellfish using heated stones, seaweed, and open fire, a technique that continues to define the classic lobster bake today.

When European settlers arrived in New England, they adopted this technique, adding ingredients like potatoes, corn, and sausage to create the lobster bake we know and love. Over the years, this communal dining experience has become a cherished tradition for coastal families, summer gatherings, and special celebrations across Maine and beyond.

 

At Red Claw Lobster Bakes, we honor this tradition by preparing our bakes the old-fashioned way—with fire, steam, and seaweed, just as it’s been done for generations.
